Set mea… more How to make carne mechada. Makes about 10 empanadas. 1. Lightly brown the meat in a large pot with olive oil on medium heat. I used 1.25lb skirt steak. Set meat aside. 2. In that pot, on medium heat, add: * 4c water * 1/4 green pepper * 1/4 red pepper * 1/2 onion * 3 bay leaves * 1tbsp salt * the browned meat 3. To prep the veggies, dice: * 1/4 green pepper * 1/4 red pepper * 1/2 onion 4. After the meat has boiled for at least 1.5hr, shred your meat - I used the fork method. 5. Transfer the veggies to a pan on medium heat. Mix in 1.5tsp garlic. 6. After about a minute, season the veggies with: * paprika * garlic powder * cumin * salt * pepper * lemon and herb seasoning 7. Add the shredded meat. 8. Slowly add 2c water and a packet of beef bouillon. You can use 2c beef broth instead. 9. Cover this. Turn heat down to low, and let it simmer for 30m. 10.
