Gather 1 (16 ounce) package elbow macaroni ½ cup vegan butter ¼ cup taco seasoning, more for garnish ½ cup all-purpose flour 2 cups unflavored oat milk 1 teaspoon sea salt 2 (8 ounce) package vegan cheddar shreds (I love the Follow Your Heart shreds) 1 (14 ounce) jar Follow Your Heart Vegenaise 2 cups corn chips Make It Preheat oven to 375ºF. Bring a medium pot of water to a boil. Add elbow macaroni and cook for 8 minutes, or until pasta is al dente. Drain in a colander and run cold water over pasta to cool and to prevent sticking. In the same pot, melt vegan butter over medium heat. While stirring, slowly incorporate in taco seasoning and all-purpose flour. Cook for 2 minutes while stirring. Slowly fold in oat milk. Bring mixture to a boil and cook for 1 minute. Fold in cooled pasta and sea salt. Reserve 1 cup of vegan cheddar shreds for topping. Fold in remainder of vegan cheddar shreds and jar of vegenaise into the pasta mixture.Transfer mixture to a 8x12 baking dish. Bake for 15 minutes. Top with remaining cheese and cook for an additional 5 to 10 minutes.Crush corn chips and use to garnish mac ‘n’ cheese, along with additional taco seasoning.
