Crispy pita, soft herby potato filling, juicy beef inside - and the secret flavor? Baharat spice 🥙 That warm Middle Eastern blend takes these Aruk Arayes to the next level. RECIPE BELOW Recipe: Ingredients: 6 golden potatoes, peeled and cooked until very soft 6 scallions (green onions), finely chopped, including the green part A handful of parsley, finely chopped 1 teaspoon salt 1/2 teaspoon ground black pepper 1 teaspoon turmeric 1 teaspoon garlic powder 1.5 teaspoons baharat 1 egg 1 pound ground beef About 6 to 7 pita breads, cut in half (12 to 14 stuffed halves) Olive oil, for cooking Method: In a bowl mash the cooked potatoes to a slightly chunky consistency and let them cool slightly. Add the scallions, parsley, ground beef, salt, pepper, turmeric, garlic powder, baharat and egg. Mix very well until evenly combined. Open up each pita half and stuff it with the Beef Aruk mixture. On the stove on medium heat, pour 5 tablespoons of olive oil into a grilling pan. Sear each stuffed pita face down for 4 minutes until it gets a nice brown color. Then sear both sides of the pita for 2-3 minutes on each side. Spray olive oil or avocado oil on top of the pitas. Transfer to a preheated oven on 400F/200C for 8 more minutes. Serve with a drizzle of tahini, amba, green schug, and sumac onions. Enjoy!
