Ingredients: 1 pound of shrimp (peeled, deveined and boiled) 8 sheets of rice paper 1 head of red leaf lettuce 3 small Persian cucumbers 1 handful of cilantro 1 package of rice vermicelli noodles Instructions: Dip your rice paper quickly in water. It should still be stiff when you lay it down, but will soften. Then place a few shrimps, lettuce, sliced cucumber, cilantro and vermicelli noodles on top. Tuck in the side first and then roll from the bottom to top. Peanut Sauce Ingredients: 1/4 cup peanut butter, 1/4 cup hoisin sauce, 1/4-1/2 cup milk, 1 tbsp rice wine vinegar, 2 tbsps olive oil, 1 tbsp minced garlic, 1oz minced shallots, 2 tbsps palm sugar or 1 1/2 tbsps brown sugar. Instructions: In sauce pan heat oil on low and add shallots and garlic. Cook for a few minutes and add sugar, 1/4 water and rice vinegar. Mix and then add peanut butter and hoisin.
