And we always called it “yellow chicken” just because of the color… more My Moms “Yellow Chicken” This is one of the dishes we always asked my mom to make us as kids. And we always called it “yellow chicken” just because of the color from the turmeric. You can use chicken breast or chicken thighs. Chicken seasoned with 1 tsp of turmeric, cumin, salt, garam masala, anardana, minced garlic. While the chicken marinades, I cut up the peppers, onions and small potatoes. once I add those to the tray, I season again with the same amount of everything. I like to add sliced jalapeños if the kids aren’t having it for some spice! We honestly used about a half a bottle of this oil. It just depends on the amount of chicken+ vega in the tray. You want to be generous because it creates the sauce at the bottom. This bakes at 375° for 40 minutes and then another 15 minutes at 400° to caramelize everything.
