We started off with Colombia 🇨🇴 and made beef arepas + limonada de coco 🍋🟩🥥 IT WAS SO GOOD!! Carne Desmechada (Beef + sauce) Add to crockpot: 2 lbs flank/skirt steak, 1/2 onion, 2 garlic cloves, 1 tsp salt, ~1 cup beef broth. Cook on low for 6–8 hrs or high 4–5 until fall-apart tender. Shred + save a little broth. Sauce: Sauté 1/2 onion + 1/2 red pepper in olive oil (5–7 min) Add garlic (1 min), then 1 cup tomatoes + cumin, salt + pepper Cook down until thick, add beef + splash of broth Simmer 5–10 min until juicy + coated Arepas Mix: 2 cups harina PAN, 2 1/2 cups warm water, 1 tsp salt, 1 tbsp butter Rest 5 min, form discs Cook skillet (med heat) 5–7 min/side until golden. Slide in half and add beef + Oaxacan cheese + avocado + green sauce Green sauce: Blend cilantro, tomatillo, green onion, garlic, lime, water + salt Limonada de coco 🍋🟩🥥: 1 cup coconut cream 1/2 cup fresh lime juice (about 4 limes) 1/3 cup sugar (adjust to taste) 1 cup cold water 2 cups ice Pinch of salt Blend everything until smooth + frothy Which country should we do next week?! 🌎 less
