Apparently pickled beets are actually worth the attitude adjustment: – support healthy blood pressure (hello heart health) – improve circulation + blood flow – natural nitrates = better energy + workout performance – vinegar helps with digestion + blood sugar balance And before anyone starts clutching their pearls about the sugar—relax. This is actually way less than a lot of recipes out there, and you’re not out here sipping the brine like a cocktail. The beets absorb some of it, not all, and they’re perfectly sweet without being over the top. So yeah… I’ll be eating a few of these daily like a reluctant adult. How many beets until I become one of those people with their life together?? Asking for me. — Pickled Beets (the “I’m doing this for my health” version) Ingredients: – Fresh beets – 1 cup water – 1 cup apple cider vinegar – 1/3 cup white sugar – 1 tsp pickling salt – Black peppercorns – Ground mustard (light shake) – Cinnamon (about 1 tbsp per pint jar) Instructions: 1.Roast whole beets at 400°F, loosely wrapped in foil, until fork tender (30–60 mins depending on size). 2.Let cool slightly, then rub skins off with a paper towel (they slide right off). 3.Cut beets to your preferred size and pack into pint jars. 4.In a saucepan, combine water, apple cider vinegar, sugar, salt, and peppercorns. Bring to a boil and stir until dissolved. 5.Add cinnamon and a light shake of ground mustard directly into each jar. 6.Pour hot brine over beets, seal, and let cool. 7.Refrigerate and let them sit at least overnight before eating (longer = better flavor) #beets #health #pickles #Recipe #EasyRecipe less
