However, now as … more Hainanese chicken, also known as Hoi Naam Gai (海南雞) is a dish my mum cooked for me A LOT growing up. Tbh as a kid, I didn’t love it that much. However, now as an adult who is more conscious about my diet - this dish is now on MY weekly rotation because of how healthy and easy it is to make 😂 I do LOVE the rice that goes with this dish (no shit because it’s cooked in chicken fat and aromatics 🤤) but you can easily sub it out for soba noodles or a salad because the chicken on its own is that good. The best Hainanese chicken to me is silky skin, “chickeny” flavour flesh, perfectly cooked breast and that gelatinous layer between the skin and meat which is what you’ll achieve. @h woo has posted this entire recipe over on his recipe hwoolee.com!
