Marry-Me Cabbage 3 tablespoons sun-dried tomato oil (or evoo), divided 1 medium cabbage, cut into 6 wedges KS&P 10 garlic cloves, thinly sliced 1 medium shallot, thinly sliced 3/4 cup sun-dried tomatoes, finely chopped 1/3 cup tomato paste 2 cups chicken or vegetable stock 1/2 cup heavy cream or coconut milk 3 sprigs fresh thyme Thinly sliced fresh basil, for garnish 1. In a large skillet, heat 2 tablespoons of the oil over medium heat. Add the cabbage and cook, flipping once, until golden, about 3 to 4 minutes per side. Transfer to a sheet pan and season liberally with salt and pepper. 2. Add the remaining tablespoon of oil to the skillet with the garlic and shallot and a heavy pinch each of salt and pepper. Cook until softened and beginning to caramelize, 3 to 4 minutes. Stir in the sun-dried tomatoes and tomato paste and cook for 2 minutes, then slowly stir in the stock and cream until incorporated. Season with another heavy pinch of salt and pepper, then add the thyme and return the cabbage to the pan. 3. Cover and simmer, reducing the heat to maintain a simmer, until the cabbage is tender and sauce has thickened, about 15 minutes. Garnish with basil, then serve. less
