Mix that into the meat along with the parsley until just combined. Line a large sheet pan and spread the mixture thin, flat, and even. Score into strips like little kebabs. Bake at 450°F for 15 minutes, then broil for 5 minutes until browned with crispy edges. Remove from the pan (leave the grease…we’re not making a soup). Mix together the tomato salad and fold in the feta.
