My cottage cheese-oat pancakes, now transformed into a next-level Drive-Thru Dupe, already plugged in on the @Weight Watchers app! #weightwatcherspartner Cottage Cheese Oat Breakfast Sandwiches Makes 4 sandwiches For the Pancakes: 1 1/2 cups high-protein oats 16 ounces low-fat cottage cheese (1%) 2 large eggs 2 teaspoons baking powder 1 teaspoon baking soda Nonstick cooking spray For the Sausage: 1 pound 99% fat-free ground chicken 1 teaspoon garlic powder 1 teaspoon smoked paprika 1 teaspoon kosher salt 1/4 teaspoon cayenne pepper Nonstick cooking spray 1 tablespoon maple syrup For the Eggs: Nonstick cooking spray 4 large eggs Kosher salt 1/2 cup low-fat cheddar 1. Make the pancakes: In a blender, combine everything but the spray. Blend until smooth. Spray a nonstick skillet with cooking spray and set over medium heat. Working in 2 batches, spoon ¼ cup batter per pancake and cook until bubbling and the edges are golden, about 2 minutes. Flip and cook 2 minutes more. Repeat until all 8 are cooked. 2. Make the chicken patties: In a bowl, mix together the ground chicken, garlic powder, smoked paprika, salt, and cayenne until well combined. Divide into 4 portions and press into round patties the same diameter as your pancakes. Spray the same skillet with cooking spray and set over medium-high heat. Sear the patties 3 minutes per side until golden and cooked, covering with a lid once you flip. Drizzle the maple syrup over the patties and cook until caramelized, 1 minute more. Remove and set aside. 3. Fry the eggs: Wipe out the skillet, then spray with cooking spray and return to medium heat. Crack in the eggs, then season each with salt and pop each yolk. Cook until the bottom is golden, 1 to 2 minutes, then flip and top each egg with 2 tablespoons of the cheddar. Cover with a lid and remove from the heat. Let sit for 1 minute to melt the cheese. 4. To assemble, place one pancake down and top with a sausage patty, fried egg, and a second pancake. Repeat, then serve immediately or wrap in foil to keep in the refrigerator as meal prep. less
