I can eat this in one seating but this could defini… more MY FAVOURITE WEEKNIGHT MEAL! 🤍 Thai inspired beef salad with a stacked 98g protein, 22g fibre and 45g carbs. I can eat this in one seating but this could definitely be scaled for a week of meal prep too! I like my steak on the rare - med/rare for this particular dish, but you can definitely cook it for longer if that is your preference. What you’ll need: • 500g ribeye steak (with bone in) • 200g chickpeas (roasted) • 2 cups of cos lettuce (finely chopped) • 1/2 a lebanese cucumber (chopped/diced) • 3/4 tomato (diced) • handful of coriander (finely chopped) • 1 shallot (sliced thinly) • 1 tbsp roasted rice powder (optional) For the dressing: • 1 birds eye chilli (finely chopped) • 3 coriander roots (finely chopped) • 1 lemon or 2 limes (juiced) • 2-3 gloves of garlic (minced or grated) • drizzle of olive oil or avocado/grapeseed • 2 tbsp fish sauce • pinch of salt • 4g of sugar (adjust to taste or feel free to use alternative sweeteners like honey/cane sugar!) Method: 1. Sear steak on high heat, then continue cooking in oven at 95 degrees for 30 minutes (depending on thickness) until internal temp reaches 52 degrees. Finish by searing on high heat again for a few seconds on each side and leave to rest before cutting it up. I personally like my steak rare- med/rare, but you can change this to your liking (i have a previous video on this for reference!) 2. Roasted chickpeas are optional, but i like adding them for an added protein and fibre source! You can add them straight from the can, but i like to roast them in the oven for 30 minutes with a light drizzle of olive oil and salt. 3. Chop and prep all ingredients for the salad in a bowl and in a separate bowl, mix together all the ingredients above. 4. Combine everything in a large bowl, but if you’re wanting to meal prep this for the week i would suggest leaving the avocado and dressing separate until serving to eat! #beefsalad #thaibeefsalad #mealprep less
