Jake’s Brookies Makes 24 brownies For the Cookie Dough: 8 ounces (2 sticks) unsalted butter, browned and slightly cooled 1 cup light brown sugar 1/2 cup granulated sugar 2 large eggs, cold 1 teaspoon vanilla extract 1 teaspoon kosher salt 1 1/2 cups all-purpose flour 1/2 cup M&Ms For the Brownies: 4 ounces (1 stick) unsalted butter 2 cups dark chocolate chips 1 cup granulated sugar 1 cup light brown sugar 4 large eggs 1/4 cup cocoa powder 1 tablespoon vanilla extract 1 tablespoon ground sumac 1 teaspoon kosher salt 1 cup all-purpose flour For the Dates: 24 Mejdool dates, pitted 1/2 cup pistachio cream, hazelnut cream, or peanut butter Flaky salt, for garnish 1. Preheat the oven to 350°F. Line a 9 by 13-inch baking dish with parchment. 2. Make the cookies: In a large heatproof bowl, whisk the butter and sugars until well incorporated, then whisk in the eggs, vanilla, and salt until smooth. Add the flour and mix until just incorporated, then fold in the M&Ms. 3. Make the brownies: In a medium saucepan, add 1 inch of water and bring to a light simmer, then place a heatproof metal or glass bowl over the saucepan. Add the butter and chocolate chips to the bowl and let melt, whisking occasionally, until smooth and glossy. 4. Meanwhile in a large bowl, whisk the sugars and eggs until very smooth and pale yellow in color. Gently whisk in the cocoa powder, vanilla, sumac, and salt, then whisk in the melted chocolate ganache until smooth. Fold in the flour until just incorporated. 5. Scrape the brownie batter into the prepared pan and spread in an even layer. Spoon the cookie dough on top, then swirl the dough into the brownie batter. Take each date and fill with 1 teaspoon of nut butter and press into the brookies, making 3 rows of 8 dates. 6. Bake for 40 to 45 minutes, then let cool completely, slice, and serve less
