Because once you realize how easy they are… buying the packaged ones starts to feel suspicious. This is the recipe I use: * 2 cups flour * 1 cup warm water * 1 teaspoon sea salt * 1/3 cup oil * 1 teaspoon baking powder Mix it together until you get a shaggy dough, then dump it onto a floured surface and knead for about 2 minutes. You’ll end up with a soft, fluffy dough that’s ridiculously easy to work with. Divide it in half, then divide those again until you’ve got about 16 pieces for taco-size tortillas. Roll each piece into a ball, then roll them out nice and thin. You barely need pressure—they’re that soft. No rolling pin? Use a glass and improvise like the resourceful queen you are. Heat a pan over medium-high (leaning high). I only grease it the first time. Add the tortilla, and once it starts bubbling, flip it. Usually around 45 seconds per side. Fast, dramatic, efficient.
