Caption: Israeli Crispy Rice Salad Ingredients 1 ½ cup day old rice 1 ½ tablespoon Jamie Geller Harissa 2 tablespoons olive oil 4 Persian cucumbers diced ¾ cup cherry to… more Israeli Crispy Rice Salad Ingredients 1 ½ cup day old rice 1 ½ tablespoon Jamie Geller Harissa 2 tablespoons olive oil 4 Persian cucumbers diced ¾ cup cherry tomatoes diced ½ red onion diced Handful parsley chopped Kosher salt Freshly cracked black pepper Zaatar Tahini ¼ cup tahini 1 lemon ¼ cup water 2 teaspoons Jamie Geller Za’atar Instructions Preheat the oven to 400°F. Mix day old rice with harissa and olive oil until well coated. Lay out on a sheet pan in a thin even layer. Roast for 30 minutes or until nice and crispy. Meanwhile, chop and assemble your salad. In a large bowl combine diced cucumbers, tomatoes, onions, parsley, salt, and pepper. Add crispy rice and toss well. Make dressing by combining tahini with lemon juice, water and za’atar.
